There are over 100 species of Thyme. Used extensively in Ancient Greece, this herb may well have been employed in the Mediterranean region even earlier.
It is one of the great culinary herbs of European cookery.
Thyme retains it's flavour on drying better than many other herbs and there are few dishes that cannot be improved by Thyme. It's flavour blends well with many other herbs and especially rosemary, enhancing them without overpowering the flavour.
